滴定法测定含糖保健品中还原糖含量

摘要:目的建立含糖保健品中还原糖的定量分析方法。方法采用滴定法直接进行检测。样品除去蛋白质
后,加入盐酸,再用葡萄糖标准溶液来滴定加有处理后样品溶液的酒石酸铜溶液和酒石酸铜空白溶液,根据二
者的葡萄糖标准溶液消耗量不同,计算测得保健品中还原糖的含量。结果方法的精密度实验相对标准偏RSI
为0.49%,水解液在2h内的RSD为0.7%,3个不同添加水平下,滴定还原糖的回收率范围为1002%~102.1%,平
均回收率101.490,相对偏差为0.8%。结论本方法样品前处理简单,操作比较快速,适用于添加糖类保健品中
还原糖的含量测定。

Determination of reducing sugar content in sugary health care products by
titration method

ABSTRACT: Objcctive To establish a method for the quantitative analysis of reducing sugar content in
sugary health care products. Methods The samples were directly detected by titration mcthod. Hydrochlori
acid was added afler removal of the protein in the samples, and the copper sulphate solution added with the
sample solution after treatment and the blank copper sulphate solution were titrated with glucose standard
solution, then the content of reducing sugar in health care products was calculated based on the different
consumption of glucose standard solution in the two kinds of solutions. Results The relative standard
deviation RSD )of titration was 0.4%, and the RSD o[ the hydrolyzate within 2 h was 0.7%, the recovery on
reducing sugar by titration was in the range of 100.2%0-102.1%, the avcragc recovery was 101.4%, and the
relative standard deviation was 0.8% at 3 diffcrent adding levels. Conclusion This mcthod is simple, fast, and
suilable for the determination of reducing sugar in sugary health care products

食品的质量。糖类定量分析一般以还原糖的测定为基
础。还原糖是指具有还原性质的糖,如葡萄糖、果糖、
糖是食品的三大营养成分之ー一,在很多食品生乳糖和麦芽糖。其他双糖(如蔗糖)三糖及多糖(如淀
产,特别在糖果エ业中具有重要的作用。在糖果等粉,因本身不具还原性,属于非还原糖,可通过水
含糖保健食品中,糖的组成及比例直接关系到保健解的方法生成相应的还原性单糖。糖的检測方法有很
