以螺旋藻为主壁材的
亚麻油胶囊制备

摘要:以螺旋藻为主要壁材,以
亚麻油为芯材,通过
喷雾干燥技术制备微胶裳。考察了喷雾干燥
工艺参数及进料配方对微胶囊产品质量的影响,筛选出明胶和
麦芽糊精作为辅助壁材,并对微
胶曩产品的性能进行了一系列表征。研究结果表明:单一螺旋藻壁村包埋亚麻油微胶囊的最佳
制备条件为空气压カ3bar,空气流速4.3m/s,进口温度190℃,进料流量900mLh,进料质量分
数10%,芯壁材质量比1:3,在此条件下微胶袁包埋率为48.85%。与单一螺旋藻壁材相比,复合
壁材微胶隶具备更高的包埋率,以螺旋藻为主壁材,以明胶和麦芽糊精为辅助壁材制备的亚麻
油徽胶囊包埋率可提升至75.36%。通过表征分析及性能检测可知,喷雾干燥制备的螺旋藻徽胶
隶表面光滑,颗粒圆、尺す小,平均粒径为7.20m,且抗氧化性与市售螺旋藻粉相比提高
47.7%。螺旋藻与明胶、麦芽糊精复配制得的微胶具有良好的热稳定性和储存稳定性,当温度
由40℃升至200℃时,复合壁材微胶的质量保持率为82.96%;复合壁材微胶能有效延缓芯
材亚麻油的氧化进程,且室温储存30d后微胶囊芯材保留率仍维持在80%以上。

Microencapsulation of Flaxseed Oil Using Spirulina as Main Wall Material

Abstract: The microencapsulation of flaxseed oil using spirulina as main wall material was
prepared by spray drying. The effects of spray drying process parameters and formula on the
microencapsulated powders were investigated in this study. Gelatin and maltodextrin were selected
as the supplementary wall materials. The characteristics of the powders were studied. The optimum
technological parameters for microencapsulation of flaxseed oil using spirulina by spray drying were
as follows: 3 bar of air pressure, 4.3 m/s of fan speed, 190 C of inter temperature, 900 m/h of feed
speed, 10% of feed concentration, and 1: 3 of the weight ratio of core material to wall material. The
microencapsulation efficiency was thus improved to 48.85%. The compound wall materials provided
higher microencapsulation efficiency compared with the single wall material. The
microencapsulation efficiency increased to over 75% with 5% spirulina, 10%gelatin and 5
