摘要:目的采用超高效液相色谱-串联质谱法建立同时测定食品中麦芽酚、乙基麦芽酚、香兰素、甲基香
素和乙基香兰素5种香精的分析方法。方法样品经甲醇提取, Wondasep MAX固相萃取柱浄化。目标化
合物以0.1%甲酸-甲醇溶液为流动相,在梯度洗脱条件下经 Inertsustain Bio C1g(2.1mm×150mm,3um)色谱柱
分离后采用电喷雾离子源( (electrospray ionization,ESD)正离子多反应监测模式( multiple reaction monitoring,
MRM)进行检测。结果5种香精线性相关系数均大于0.99,方法定量限在0.9~16,2ng/g之间,在3个加标水
平下的平均回收率为80.19%~106.0%,相对标准偏差不大于8.9%结论该方法准确、灵敏,可用于液体乳
婴幼儿配方食品、食用油、乳制品、饮料、烘焙食品等实际样品中香兰素、甲基香兰素、乙基香兰素、麦芽
酚和乙基麦芽酚的同时测定。

chromatography-tandem mass spectrometry

ABSTRACT: Objective To establish a method for simultaneous determination of vanillin, methyl vanillin, ethy
vanillin, maltol and ethyl maltol in foods by ultra performance liquid chromatography-tandem mass spectrometry
(UPLC-MS/M). Methods The samples were extracted with methanol, and purified with Wondasep MAX solid
hase extraction column. The separation was performed on an Inertsustain Bio Ci8(2.1 mmx 150 mm, 3 um )column
using a gradient elution program with mobile phase of 0.1 formic acid and methanol solution. The 5 kinds of
components were determined in the modes of electrospray positive ionization(ESI)and multiple reaction monitoring
(MRM). Results The correlation coefficients of 5 kinds of components were more than 0.99. The limits of
