摘要
常言道“民以食为天”。这足以表明食物从古至今都对人类的生存具有重要作用。而且随着社会经济迅速发展, 人类对健康饮食的要求越来越高,人类也越来越关注食品的安全问题。吃的一切食物无论加工与否都通称为食品。它们为人提供正常身体生长发育、新陈代谢、修补组织、延续生命以及从事生活和劳动所需的营养素和能量但随着自然生产方式的减少,工业化自动化比重逐渐增加,食品原料在生产、运输、储存、加工等过程中都会特意或不特意的掺杂一些化学物质(如食品添加剂、污染物等),这给人们越来越重视的食品安全问题带来越来越了更多的不安全因素,更引起了人们的普遍关注。近年来,发生在世界各地由于化学物质引起的食品安全问题越来越重,跟据近年医学上的统计全世界上近年来新增患癌症的人中55%左右和食品的污染有关系。在我国,食品中掺杂有害化学物质的问题就尤为严重,我国每年出口的粮食、水果以及其它食品因农药残留、食品添加剂、微生物污染等超标而被国外扣留。使我国在经济上承受了巨大的损失,还对人们的健康造成威胁甚至是危害。所以降低食物化学污染程度,防止污染物随食品进入人体,是提高食品安全性的重要环节之一。

Abstract
As the saying goes, "hunger breeds discontentment". This is enough to show that the food since ancient times to the survival of mankind has an important role in. But with the rapid development of social economy, human health, diet of the increasingly high demand, the human is also more and more attention to food safety issues.
