京畿地区香菇中甲醛含量检测及分析

摘要:目的通过分析京畿地区产地香菇和市场香菇中的甲醛含量,掲示不同种类、干湿形态、生长阶段、
培育方式的香菇中甲醛含量变化,为香菇中的甲醛本底含量研究提供数据支持。方法利用乙酰丙酮分光光度
法測定香菇甲醛含量。结果(1)鮮香菇中甲醛含量差异较大,部分高达200倍左右:(2)鮮香菇中中菇含量最高
总体呈中菇>大菇>小菇趋势:(3)不同生长阶段的香菇中3潮或4潮的甲醛含量较高,与香菇发育完全、代谢旺
盛有关;(4)地栽方式培育的香菇其甲醛含量一般是架栽的2倍左右:(5)参照出口香菇中甲醛限量标准,部分鲜
香菇中的甲醛含量会对出口造成一定影响。结论栽培工艺、菌种类型对香菇中内生甲醛含量有着决定性影
响,应加强对比,进行交又试验、优化培育方式,遴选香菇菌种,降低香菇内生甲醛的含量

Determination and analyzation on the formaldehyde content in Lentinula
edodes from the capital region and its environs

ABSTRACT: Objective To lay the [oundation of basement content of the formaldehyde in the Lentinula
edodes by studying their kinds, dried and fresh status, dillerent growth phases and methods of cultivation,
which were collected from the production bascs and the markets around the capital city and its environ
Methods The acetylacetone spectrophotometry was used to detect the formaldehyde content in Lentinula
edodes. Results It showed thal the content of Formaldehyde could be 200 limes dillerent in the fresh
Lentinula edodes; the elects order of the content of formaldehyde in the fresh Lentinula edodes was middle
mushroom> big mushroom>small mushroom; the content of Formaldehyde in the fresh Lentinula edodes al
3-phase or 4-phase were the most greatest compared to that of other growth-phase, which could be relevant to
the degrce of maturity and metabolism; the content of formaldchyde which cultivating in the ficld was 2
times more than that on the frames; according to the limit standard for export, the content in / entinula edodes
from the capital region could had some effect to exportation. Conclusion The methods of cultivation and the
kinds of Lentinula edodes play a decisive role in its content of formaldehyde. Some actions should be done to
enhance the comparalive trial, to optimize the cultivaling methods and select mushroom strains to reduce the
content of formaldehyde in Lentinula edodes
