摘要:对虹鳟鱼骨中总蛋白、胶原蛋白、总氨基酸、脂肪与矿物质等营养成分进行分析检测。结果表
明:虹鳟鱼骨中总蛋白、胶原蛋白、总氨基酸、脂肪、灰分含量分別为21.32%、4.56%、19.08%、18.38%、
1.93%,其中必需氨基酸为22.03%;鱼骨中不饱和脂肪酸和饱和脂肪酸含量分别为13.36g/100g,5.25g/100g,
其中二「碳五烯酸(EPA)1二トご碳六烯酸(DHM)含量为3.36g/100g,占脂肪酸含量的18.05%:虹鳟鱼骨
中钙、憐、钠、钾含里较高,分别为50252.58mg/kg、32893.20mg/kg、2080.52mg/kg、111.89mg/kg,同时还
含有铁、锌、锰等多种微量元素。虹缚鱼骨营养丰富,顺具开发利用价值。

Abstract: The nutritional components of the Trout bone including total protein, collagen, total amino acid, fat
and mineral elements were determined. The results showed that the contents of total protein, collagen, total amino
ac id, [at and ash in Lhe Troul bone were 21.32%, 4.56%, 19.08%, 18.8, 11.93%, respectivel y, and EAA was

kg, respec Lively. Other inineral elements including Ie, Zn, Mn, Mg were also analyzed. Trout bone has abundant
nutri tional components and a higher value o[ deve lopment
