摘要:红菌是我国币要的微生物资源,其发轉产品丝红曲在我国近两千年的成用历史。红Ⅲ菌可产生红
曲色素( Monascus Pigments,Mps)等多利有益的次级代产物,但部分红曲菌产生的枯震素( Citrinin,
CII)引起了人们对红产品安全性的关注。本研究以22株红菌(含14株模式菌株)为研究材料,通过
复合翠取剂前处埋方法和超向效液相色谱( Ultra Performance Liquid Chromatography,UTLC)法分析其发
悖红曲米中Mps和CIT含量,结粜表明13株菌可阿时产生:Mps和CI,4株菌只产:CIT不产生Mps,5
株膚既不产Mps也不产CIT,Mps产其最高的菌株是紫色红曲3.4443,CIT产拡最向的?株是橙色红血
3.4384。利用主成分分析( Principal Componcnl Analysis,PCA)分析发現在产Mps和CIT的红曲南株中
黄、橋色素与桔素呈正相关,而红色素与桔素呈负相关。该结果可为系統分析红出菌樣代谢产物差异,
高产Mps产品并发提供参考。

Analysis of Monascus pigments and citrinin in diffcrcnt Monascus spccics

Abstract: Monascus spp. are the important microorganism resources in China, its fermented products named
hongqu have been applied in China for more than 2000 years. Moasczis could produce many beneficial secondary
metabolites including Monascus pigments ( Mps), while some Monascus strains could produce Citrinin(CIT)
which allccled the application of Monascas products. In this study, the yicld o! Mps and Cii'in 22 Monascas
strains(Including 14 model strains were analyzed by Ultra Performance Liquid Chromatography(UPLC) after
prctrcatmented with a composite extractant. The results showed that 13 strains could produce Mps and CIT, 4
strains could only produce Cll, while 5 strains produce no Mps or CII. Among them, Monascus 3.4443 and
3 4384 possessed the highest Mps and CII yicld respectively. The principal component analysis(PCA)results
indicated that the yellow pigments, orange pigments and CIT were positive correlation, while red pigments and
CII were ncgative correlation. The resulls could provide reference to the systcm analysis o[ Monascus
metabolites difference and the exploitation of Monascus products with high Mps
